Linguine al Pesto is a dish that comes from the Liguria region of northern Italy. It’s roots are traced back to the Middle Ages when “garlic sauce” was made from nuts and garlic. The addition of basil to this sauce was then in the nineteenth century. When making pesto you must be sure not to mistreat the basil in order to prevent oxidation. We serve our pesto over linguine with potatoes. It is also a popular sauce to be served on gnocchi and in lasagna.
